When it comes to cocktails nothing beats a good gin and tonic if you ask me. If you’ve scrolled through this page a bit, you’ve noticed I have a thing for this lovely refreshing cocktail. For further ideas, you can check my Pink Grapefruit Gin and Tonic or Elderflower And Passion Fruit Gin And Tonic. This time I have a delicious Spring gin and tonic with a homemade strawberry simple syrup.

Before trying to make my first homemade syrup, I was a bit scared to try, but these are extremely simple to make. Hence the name ‘simple’. Literally, just bring everything to a boil, let simmer for fifteen to twenty minutes, and chill. That’s it! You can really go crazy with flavors here and invent your new flavor combos.

Once you have the syrup, you can use it for this cocktail, some other cocktail, dilute it with water and drink like that, use in desserts or pour over your favorite ice cream. So many choices!

If you’re going to make this gin and tonic, you can mix the syrup with gin and a regular tonic or you can make it a bit extra and choose pink tonic water. It will really enhance the flavor of your gin and tonic and add a little more color as well.

Before we go on with the recipe, I want to give you an update on one of the projects me and my hubby are working on lately. It’s fermenting our own ginger beer. We’ve had lots of success and now we’re experimenting with different flavors. We’re gonna do a bit more experimanting and testing and then I will also share some recipes and tips about fermenting your own drinks. How would you like that?

Strawberry Gin and Tonic

Ingredients

Cocktail

  • 30 ml gin chilled
  • 90 ml tonic water (regular or pink) chilled
  • 30 ml strawberry simple syrup chilled

Strawberry Simple Syrup

  • 250 g strawberries (½ lb)
  • 1 cup water
  • 1 cup sugar

Instructions

Strawberry Simple Syrup

  1. Place all syrup ingredients into a saucepan. Bring to a boil then reduce to a simmer and let cook for 15-20 minutes until strawberries are very soft and the lliquid has become deep red.

  2. Strain the syrup through a mesh sieve making sure not to press down the strawberries.

  3. Leave the syrup to cool to room temperature then move to the fridge and wait at least an hour to chill. You can use the leftover strawberries as ice cream garnish.

Cocktail

  1. Place 30 ml of the strawberry simple syrup into the bottom of a cocktail glass. Add a handful of ice. Then pour over the gin and finish with regular or pink tonic water.

  2. Serve immediately.

Luckily I have a lovely cocktail ready for a romantic dinner. Even though most of the world is still in one or another form of lockdown, we still deserve some splurging, right?

A nice dinner with the best dessert ever. And of course this elderflower and passion fruit gin and tonic!

I love gin and tonic because it’s so easy to make. Basically, all you need to do is add some ice in your cocktail glass, add all the ingredients and enjoy 🙂

This time, I’ve given it a bit sweeter twist with fresh passion fruit, which I absolutely love, and homemade elderflower syrup. However, if you don’t have a homemade one, a storebought is just as fine.

This combination of flavors and sweetness with the biterness of gin and tonic is in my opinion the biggest selling point of this cocktail.

A good gin and tonic is made with quality gin and quality tonic as well. Keep in mind that your gin and tonic will only be as good as the ingredients put in. This doesn’t mean you need to go with the most expensive stuff. However, the cheapest plastic bottle drinks are probably lower quality than you want in a gin and tonic. So, I encourage you to explore, which flavors you like.

Most of simple gin and tonics include some amount of citrus flavor. For my Valentine’s day elderflower and passion fruit gin and tonic, I passed on adding citruses. I used my elderflower syrup that already included some lemons. Most elderflower syrups do.

Plus, I really wanted to create a more feminine floral/tropical cocktail. But, if you feel like adding a hint of citrus go ahead and squeeze in a bit of lemon juice!

Elderflower And Passion Fruit Gin And Tonic

Ingredients

  • ice
  • 2 ounces quality gin (1/4 cup / 60ml)
  • 4 ounces quality tonic water (1/2 cup / 120ml)
  • 1 fresh passion fruit
  • 1-2 tsp elderflower syrup

Instructions

  1. Fill the cocktail glass with ice.

  2. Add the flesh of fresh passion fruit and elderflower syrup to the glass.

  3. Pour over gin and finish with pouring over the tonic.

  4. Gently stir to combine.

Dried Fig Blood Orange Tart

It’s almost Valentine’s day. 

Me and my husband don’t really celebrate it, but this year we made plans to have dinner with two our friends, so we’re having a double date. They are cooking the main dish, we are making dessert. And I think this pie is perfect for the occasion. Only change I’ll have to make is the crust, because my friend is gluten free. I’ve never made a gluten free chocolate tart crust before, so any suggestions are welcome 🙂 If I manage to do a nice one, maybe I’ll even add the recipe here.

First of all, I’m in love with the dried fig and orange combo. Blood orange or regular orange, both is super delish! I tried it for the first time in a smoothie. I was combinig these two just because I had nothing else to put in and it sounded like a great combination. Yes, yes, you’re missing a lot if you’re never tried those two together. I mean it! Go ahead, make this blood orange tart or simply take an orange and eat it next to a fig. How is it? Are you loving me right now? 😉

Okay, so I was thinking about what to make for Valentine’s day. I’ve shared a brownie recipe last year, this year I wanted something more fruity. Yesterday we celebrated the death of our greatest poet, which is also the biggest cultural holiday in Slovenia. We had a big celebration in the town where he lived, just a couple of kilometres from my village. Wow, way too many people, I had to hug my belly to protect it from the accidental bumps.

This poet liked to give out dried figs to the children. One of his nicknames was also Dr. Fig, for that reason. So I used figs as an insiration and added the oranges, because AGAIN they are perfect for each other 🙂 Of course I couldn’t go without just a tinsy bit of chocolate, so I not-so-secretly added some cocoa powder to the crust.

I’m absolutely in love with the color of the curd. I know, you’d expect a red color, especially if you look at the red juice from the orange, but the eggs and butter make it a more pale yellow to orange color. So it might look like an orange, not blood orange tart. The oranges I got were not red all the way through, if you try with oranges that have a completely red flesh you might get a slightly different result. But the eggs and butter will still make it pale. I think it’s such a romantic color, but I’m probably under pregnancy hormones influence 😛

Dried Fig & Blood Orange Tart

Makes one 22 or 25 cm (9 or 10 inch) tart.

Ingredients

Chocolate Crust

  • 1⅓ cup all-purpose or wholegrain wheat flour (190g)
  • ½ cup icing sugar (55g)
  • ¼ cup cocoa powder (25g)
  • ¼ tsp salt
  • 140 g cold butter cubed

Dried Fig Jam

  • cup dried figs hard stem removed and quartered
  • 1 cup 100% apple juice

Blood Ornage Curd

  • 3 large eggs
  • 2 egg yolks
  • ¾ cup blood orange juice freshly squeezed
  • ½ cup granulated sugar (100g)
  • zest of one big orange
  • 150 g room temperature butter cubed

Instructions

Chocolate Crust:

  1. Preheat the oven to 190°C

  2. In a food processor, mix toghether dry ingredients. Add butter and pulse about 10-15 times to get dry crumbs. Add the egg and pulse just unil the dough starts to come together, but does not form a ball. Gently form a ball with your hands, no kneading is needed. Wrap into plastic foil and leave to rest in the fridge for 30 minutes.

  3. After 30 minutes roll the dough into a circle of the diameter of your tart tin + two times the height of the sides. (My tin is 25 cm + 2,5 cm height, so I rolled it out to 30 cm). For easier rolling place a slightly wet teatowel on the counter, then baking paper over it, then the dough and another piece of baking paper. This way the dough doesn't stick to the rolling pin and the teatowel prevents the baking paper to slip. If you notice the dough is starting to stick to the baking paper, flour it lightly.

  4. Transfer the crust to a buttered tart tin, cut away the excess dough. Make a few holes in the bottom with a fork, cover with tin foil and place baking weights (I use old coins) over the foil.

  5. Bake for 20 minutes, then uncover and bake for 10 more minutes.

  6. Leave to cool in the tin, before taking out or you might break the crust.

Dried Fig Jam

  1. In a small sauce pan, soak dried figgs in apple juice for 15 minutes: After that bring to a boil, then simmer for 20 minutes. Transfer the mixture to a food processor or a blender and mix. I prefer the jam to still have small pieces of figs, but you can mix it all the way to a smooth jam. At first, the jam will look a little too runny, but will thicken while it cools.

Blood Orange Curd

  1. Place eggs, egg yolks, orange juice, orange zest and granulated sugar in a heat proof bowl. Boil water in a sauce pan and place the bowl over it. Leave water so simmer on medium while whisking the egg mixture for 15-20 minutes or until it starts to thicken and it reaches 75°C (170°F).

  2. Remove the bowl from the sauce pan and whisk in butter, a few cubes at a time.

  3. Cover the bowl and leave to cool.

Assembly

  1. Spread fig jam over the cooled crust and pour over cooled blood orange curd.

  2. Leave to set in the fridge for at least 6 hours or better overnight.

What’s better than chocolate? Triple chocolate. And even better are these triple chocolate sour cherry brownies with bittersweet, semi-sweet and white chocolate.

Since it is Valentine’s day on Sunday, I think it’s appropriate to do something chocolaty. One of my Instagram followers suggested I did a brownie recipe, so I’m making it! How exciting is this?

I’m by no means a brownie expert. This recipe came out by pure luck. It was one of those moments when you say, I’m just going to make something. So I did, I checked out a few recipes, written down some thoughts and ratios and started cooking. After the brownies came out of the oven the first time I was smitten by them. They were the perfect ratio between a cakey and fudgy brownie, in favour of cakey, which is what I like.  Later I added more sour cherries and some white chocolate chips on top, just because I can 🙂

If you’ve ever made brownies, you know they can be fudgy and dense, or they can be more cake-like. These brownies are more on the cakey side. There is some baking soda in them and an extra egg, so they have a cakey texture on top and the bottom, but they are thick on the inside, because the ratio between butter and chocolate to dry ingredients is high. There are bittersweet chocolate chips in there, which gives them extra gooeyness. White chocolate chips and sour cherries on the top are for some sweet and sour, moist kick. Believe me, they re even better than they sound.

If you are wondering how to make a perfect brownie, Samina from The Cupcake Conffesion has written a nice post about Top 5 mistakes to avoid when making brownies. They might seem obvious, but from my own experience I say, the obvious mistakes are the ones we make most often.

As for the cooling down goes, I’m the one that’s always impatient. I want to dig in immediately. But, if you are planing on serving your brownies to someone, please don’t do that! There’s almost no possibility you’re going to be able to cut them into beautiful piceces, or even taking them out of the pan, without messing them up. The best is if you cool it down completely. If there’s no one waiting for these little goodies, dig in with a spoon, while they are hot. But watch out that no one is looking 🙂

TRIPLE CHOCOLATE SOUR CHERRY BROWNIES

Ingredients

  • 200 g semi-sweet chocolate
  • 110 g butter
  • 3/4 cup sugar
  • 3 eggs
  • 1/2 cup whole grain spelt flour
  • 4 TBSP cocoa powder
  • 1 tsp vanilla seeds
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 60 g bittersweet chocolate chips
  • 60 g white chocolate chips
  • 1 cup sour cherries

Instructions

  1. Preheat the oven at 175 °C. Butter the sides and the bottom of a 20×33 cm (8×12 inch) pan and line it with baking paper.
  2. Put the bittersweet chocolate and butter in a large bowl and set it over a saucepan of simmering water. Stir occasionally, until the chocolate and butter are completely melted.
  3. Turn off the heat and add the sugar. Whisk until the sugar is completely combined, then remove from the saucepan and wait for the mixture to cool for about 10 minutes.
  4. Whisk in the eggs, one by one.
  5. Add vanilla bean powder, baking soda, salt, and a third of the flour to the chocolate mixture. Whisk well. Add the rest of the flour and whisk again until the mixture is smooth.
  6. Stir in the bittersweet chocolate chips.
  7. Pour the batter in the prepared pan and sour cherries. Don’t press them in.
  8. Bake for about 25 minutes or until the edges start to pull away from the sides of the pan. Keep in mind that it is better to slightly underbake than overbake brownies.
  9. When you take the brownies out of the oven sprinkle them with white chocolate chips. Here you can press in a little if you like.
  10. Wait for the brownies to cool completely, then lift them up together with the baking paper and cut them into 15 pieces.
  11. Store in a plastic wrap or air-tight container at room temperature for up to 4 days.
