Are you up for an amazing Winter cocktail?

I’m catching the last days of some fresh clementines, that are super delicious in cocktails. I’m a huge fan of citruses like grapefruit or oranges in cocktails. And I just realized I haven’t posted a cocktail recipe with clementines yet. So let’s do that!

Ready?

All you need is some Aperol, which is a bright orange, bittersweet low-alcohol liqueur. I’m changing the original recipe a bit and trust me, it’s worth it, even though I love the original as well. The original is just Aperol liqueur, Processo wine and sparkling water. The citrus flavor adds so much to this drink.

Can you make this clementine aperol spritz less alcoholic?

Yes, absolutely. Simply change a part of Prosecco with clementine juice or apple juice and your cocktail will be less boozy.

I don’t suggest replacing Prosecco with sparkling water, because the taste will be too diluted.

  • 2 parts Aperol (6 cl or 2 oz)
  • 2 parts freshly squeezed clementine juice (6 cl or 2 oz)
  • 1 part Prosecco (3 cl or 1 oz)
  • 1 part soda water (3 cl or 1 oz)
  • ice
  • clementine slices for garnish

Instructions

  1. Fill a large glass with ice.

  2. Pour Aperol over the ice followed by freshly squeezed clementine juice.

  3. Add soda water and garnish with a clementine slice.

Luckily I have a lovely cocktail ready for a romantic dinner. Even though most of the world is still in one or another form of lockdown, we still deserve some splurging, right?

A nice dinner with the best dessert ever. And of course this elderflower and passion fruit gin and tonic!

I love gin and tonic because it’s so easy to make. Basically, all you need to do is add some ice in your cocktail glass, add all the ingredients and enjoy 🙂

This time, I’ve given it a bit sweeter twist with fresh passion fruit, which I absolutely love, and homemade elderflower syrup. However, if you don’t have a homemade one, a storebought is just as fine.

This combination of flavors and sweetness with the biterness of gin and tonic is in my opinion the biggest selling point of this cocktail.

If this floral flavor is not your jam, I have a more citrusy grapefruit gin and tonic recipe as well.

A good gin and tonic is made with quality gin and quality tonic as well. Keep in mind that your gin and tonic will only be as good as the ingredients put in. This doesn’t mean you need to go with the most expensive stuff. However, the cheapest plastic bottle drinks are probably lower quality than you want in a gin and tonic. So, I encourage you to explore, which flavors you like.

Most of simple gin and tonics include some amount of citrus flavor. For my Valentine’s day elderflower and passion fruit gin and tonic, I passed on adding citruses. I used my elderflower syrup that already included some lemons. Most elderflower syrups do.

Plus, I really wanted to create a more feminine floral/tropical cocktail. But, if you feel like adding a hint of citrus go ahead and squeeze in a bit of lemon juice!

  • ice
  • 2 ounces quality gin (1/4 cup / 60ml)
  • 4 ounces quality tonic water (1/2 cup / 120ml)

Instructions

  1. Fill the cocktail glass with ice.

  2. Add the flesh of fresh passion fruit and elderflower syrup to the glass.

  3. Pour over gin and finish with pouring over the tonic.

  4. Gently stir to combine.

I know Spring is in its full blow but I’m already dreaming about refreshing Summer drink.

So I’m getting ready for Summer with one of the best Summer staple fruits – blackberries.

When they are in season, I freeze them, so I can use them for baking or for drinks throughout the year. If you have access to some delicious frozen blackberries or they happen to be in season, you need to make this mocktail. It’s made with smashed blackberries, some sugar, rosewater, and lime juice and topped with either water or sparkling water – whatever you prefer.

Of course, if you’re making a party and you wanna add some booze, that’s totally fine. A splash of gin or vodka would also make a great drink.

But these days, mocktails are my jam! Especially drinks with flowers. Luckily I still have some elderflower cordial from last year, although elderflowers are starting to bloom again so soon I’ll be making a fresh one 🙂

So this blackberry rosewater smash is a really easy drink to make.

After making some simple rose water syrup, just mix it with some smashed blackberries, lime juice, and water or sparkling water and you’ve got yourself the most delicious refreshing treat!

How to make simple syrup?

It’s actually very easy. All you need to do is combine the same amounts of water and sugar and cook until the sugar just dissolves. You don’t need to cook past that, it’s done. After the syrup has cooled down, add the rose water. I like to add it after the syrup has cooled so all the essential oils (and flavors!!) stay intact.

What if you don’t have rose water?

So you have no rose water, I get it it’s not something everyone has in their kitchen. That’s not a problem at all. I like rosewater because it adds such a nice flowery flavor.

So if you happen to have some elderflower or lilac syrup, you can use those too!

Virgin Blackberry Rosewater Smash

Ingredients

Rose water simple syrup (can be replaced by 1/2 cup lilac or elderflower syrup)

  • cup unrefined cane sugar
  • cup water
  • 4 tsp rosewater

Other ingredients

  • 2 cups blackberries fresh or thawed frozen
  • 2 tsp lime juice
  • cups water or sparkling water

Instructions

  1. In a small saucepan combine water and sugar. Cook over medium heat until sugar dissolves.

  2. Let cool to room temperature, then add rose water and stir well.

  3. Divide blackberries, lime juice, and rose water simple syrup into four glasses and use a muddler to pureé the blackberries.

  4. Add some ice to the glass and pour over water or sparkling water.

  5. Serve immediately.

After the elderflower cordial recipe from yesterday, I just had to make a delicious summery mocktail. Nothing beats the summer heat like a super refreshing drink. I made a non-alcoholic recipe, but I added a hint on how to make it boozy in the notes if you like that 🙂

We’re spending so much time outside now, that it’s finally hot and feels like summer is just around the corner. You know, no more long sleeves and socks… Grrr, I hate them, I truly do! The greatest time of year is when I can move my socks to the back of the closet. So yeah, we’re thinking about buying some kind of transportable cooker or grill, so that we can prepare dinners outside.

During the Winter it’s become such a nice habit to cook the dinner together with hubby and son. We really wanna continue doing this through the Summer, but we also want to be outside as much as possible.

Back to the recipe, this is another very simple recipe and it literally takes minutes to make. And if that is not enough, it’s packed with flowery elderflower flavor and has the citrusy zing of grapefruit and lime. What else could you ask for?

What if I don’t have elderflower cordial on hand?

You can use fresh or dried elderflowers just the same. Pour half a cup of boiling water over 2 elderflowers and add 1/4 cup sugar. Let steep for 10 minutes. Let cool down. Use it as the syrup in the mocktail.

I’d say cheers, but it’s long gone.

There’s something about mangos in smoothies. Puréed mangos give such a nice smooth texture to drinks. They are one of my favorite fruits to put in smoothies, besides avocados. All due to the texture. Okay, and flavor too 😀 What are yours?

Since becoming a mom, maintaining a healthy diet has been so hard. The biggest problem for me is forgetting to eat, which I find super weird and annoying. And that’s why recipes like this are super important… Simple, easy and done in no time. I’m planning on sharing a few other recipes suitable for mom’s with little time to prep and also for little kids to enjoy. Btw, baby J tried the mango margarita smoothie and he approves 😀

Mango Margarita Smoothie

  • 1/2 mango (chilled)
  • 3 oranges (chilled)
  • 2 limes (chilled)
  • salt for garnish

Instructions

  1. Peel mango and juice oranges and limes and blend all until smooth.

  2. Run a lime wedge around the outside of a glass and dip the rim in some salt for garnish and taste. Pour in the smoothie.

I’m getting so excited about spring and can’t wait for everything to go green. We’re already able to waste our time outside in nothing else but a sweater. Remember my love of balcony life. Well, here it is! I can almost smell spring 😀 Winter this year sucked, almost no snow… I mean it was cold, which is okay by me, but no snow. Come on, that’s just unfair!

This spring will bring a new little cuddling creature to our life, so there’s really nothing to complain about. Only one more month to go, but I’m hoping sooner 🙂 Can’t wait to meet you little baby! These past 8 months went by really fast, I got very attached to my big belly and the very intesnse baby kicks. I’m begining to think this baby will be a kickboxer or something. I remember reading about having to count kicks if the baby is not moving enough and then I think is there also something like kicking too much?! Probably not 🙂

Back to the recipe!

With the spring knocking on the door, the season of some new green leaf veggies is starting and I’m able to add them to my green smoothies. I got hold of some really nice fresh spinach last week and I couldn’t resist to make a delicious smoothie for breakfast. There are still some frozen wild blueberries in the freezer, which I love for breakfast. In the winter I heat them up and pour over the pancakes with some yogurt. Yum!

Ok, ok, back to the smoothie. So I named this drink matcha smoothie, because I added a little for some nice morning tea feeling. Mmm, cozy 🙂 I don’t know why exactly, but for me drinking matcha – in any form – is like a warm hug. Even if I drink it cold.

I couldn’t resist but adding some lime juice to this almost-spring-celebrating smoothie. Delicious! 🙂 It’s sweetened with honey, which you probably already know is my favorite sweetener 🙂

Now I’m anxiously waiting for strawberries, especially wild strawberries to make strawberry layer cakes and elderflower to make some cookies. With a little bit of luck, the baby and I will be well enough by the time those two are in season and we’ll be strolling through forests searching for these beauties 🙂

Ingredients

  • 1 cup cashews soaked overnight
  • 2 cups water
  • 1/2 avocado
  • 50 g spinach (or a big handful)
  • 4 tsp matcha powder
  • juice of 1 1/2 limes
  • 2 TBSP sunflower seeds
  • 3 TBSP honey (or other sweetener for vegan version)
  • 1 cup blueberries

Instructions

  1. Mix everything except blueberries in a blender until smooth. If the smoothie is to thick add more water.

  2. Place blueberries in two glasses and mash them gently with a spoon or a mortar.

  3. Pour the green smoothie over mashed blueberries and enjoy!

What do you do when you can’t have booze? Make something out of beer.

Yeah, yeah, I know many of you will say beer without alcohol is not beer at all and you might be right. Some of them taste…hmmm. How should I put it? Miserable.

But when you’re pregnant and can’t have alcohol, trust me, it’s much easier to like non-alcoholic beer. Some brands make very good ones, but I’ve also had one that tasted like a chewing gum. Uhm, not so good!

Well, it was about time to make another drink recipe, since it’s been a while now. I’m all about citruses during this winter. I don’t think I’ve eaten so many oranges and mandarins at any point in my life and a big squeeze of lemon in a glass of water is a total must. I haven’t had any pomelo, so I thought I’d put it in a sparkling beer drink with some spicy ginger and have a pomelo ginger shandy.

Pomelo is such an awesome fruit, it’s sweet like a grapefruit, but doesn’ have the bitterness, which is great for a beer drink, since beer is already bitter. 

On top of all the pomelo juice, the ginger gives the drink a little heat and warms you up 🙂 That’s why I love ginger!

And pretty much everything about this drink 😀

This pomelo ginger shandy is such a nice refreshing drink for the lazy days leading to spring, sitting in the sun on a balcony wrapped in a warm blanket. Listening to bird singing starting again, such a lovely time. I’m getting sentimental.

Our balcony life (yeah, this should totally be a title of a movie) is gone during the winter, but when the sun starts to become warmer and the days get longer, we start hanging out on the balcony again. During the spring and summer it’s where we eat, play board games, read and do pretty much everything. Like, who needs the indoors, anyway?!

So, I’m very happy with the longer not so freezing cold days 🙂

Ingredients

Simple ginger syrup

  • 4 TBSP cane sugar
  • 3 TBSP grated fresh ginger
  • 1 TBSP pomelo zest
  • 2 TBSP lemon juice

Pomelo Ginger Shandy

  • 500 ml pomelo juice (juicing described in the instructions)
  • 500 ml lager beer (alcoholic or non-alcoholic)

Instructions

Simple ginger syrup:

  1. Add all ingredients to a mortar and make a smooth paste.

Juicing pomelo:

  1. Pomelo is a big fruit and it's hard to juice it on a regular juicer. I peel the pomelo and remove the thin white skins, then blend it in a blender for a minute or two and use a nut milk bag or a tea towel to squeeze out the juice.

I love watching my tomatoes grow. It’s an obsession.

Some people go for a morning walk in the forest, I take a stroll in the garden to check what’s grown overnight.

So now I’m anxiously waiting for my tomatoes to ripen and then I can eat them like apples. That’s my favorite way!

I even have a photo from when I was little, sitting in the garden and eating a whole tomato. Good times 🙂

Ingredients

  • 8 tomatoes
  • 1 cucumber peel if you are looking for nice red color
  • 1 red or yellow pepper seeds and stem removed
  • 1 medium-sized onion peeled
  • 3 cloves garlic peeled
  • 1 TBSP olive oil
  • 1 TBSP lemon juice
  • zest of 1 lemon
  • black pepper
  • salt

Instructions

  1. Chop the vegetables into chunks.
  2. In a blender, mix together all ingredients, until you get a smooth soup.
  3. Pour into cups or bowl and serve cold.

Notes

Keep the vegetables in the fridge for a couple of hours before making the soup.

It’s been a while since you’ve heard from me. I’ve had a bad gum infection with one week of high fever. I couldn’t eat anything but blended food. Luckily it’s almost over and I can tranfer to harder food. I’m totally feeling like a little baby while I’m writing this 🙂

So I was living of drinks like this watermelon slushie or roasted peach and strawberry fizz. Not complaining, but I wouldn’t mind biting into some chrisp bacon 🙂

We’ve been having beautiful sunny summer days over here. Like perfect day, not to hot, not to rainy. Just perfect. Note: I was resting inside with fever. Not complainging, no.

And what says summer like a nice big juicy watermelon. It is perfect as is, but it’s even more amazing in combination with fresh mint. Trust me, you’re gonna be a huge fan when you try it!

I mean, look at this intensive red color. Like you can resist… I know I can’t. Wait a second, I’m gonna go whip one up.

It’s so easy and the best part is, you don’t even need to remove the seeds. The seeds of the watermelon are packed with vitamins and minerals. It would be such a waste to remove them.

I’m usually throwing the seeds out, because they are to hard to eat, but if you blend the watermelon that’s not really necessary.

I bring you summer… on a stick. It’s not a joke!

I hope, wherever you’re from, you’re having a hot summer weather. It was crazy here over the last ten days. We’ve had all weather imaginable. Snow, sleet, fog, rain, sun, wind… We planned to escape to Sarajevo during the holidays, but it was covered with snow, so we’re saving the trip for warmer times. 

It took me about two days to get comfortable with doing nothing and switching to my off mode. But then it was actually kinda nice to lay back, watch some TV and not feel guilty, go walking in the snow and then biking to a nearby mountain the next day, watching the 1st of May bonfire, and squeeze in a little dance practice. It was all good 🙂

Now, to the recipe already!

I remember having ice lollies in a long plastic wraps, when we were little. For the first few moments it tasted delicious and sweet, but then after we sucked all the juice out, we were left with a block of flavourless ice. How dissapointing! That’s not the case with this lolly – all flavour, no tasteless icy leftovers.

These peach and celery ice lollies are so easy to make and it’s a nice way to get yourself or the kids to eats more fruit. Cuz, who doesn’t like an icy treat, am I right?

The idea for this recipe actually came from my husband. He said, why not pair a fruit with some unexpected greens, like celery. So we did, and boy was he right. It tastes amazing! I’m not exaggerating. This combo works so well.

Give it a try!

All that’s required is to blend all the ingredients and pass the mixture thorugh a sieve, to give it the silky texture. Wait a few hours until the lollies set and you got yourself a fruity refreshment 🙂

PEACH AND CELERY ICE LOLLIES

Ingredients

  • 3 ripe peaches
  • 25 g celery stalk chopped
  • 1/4 cup honey
  • 1/2 cup water

Instructions

  1. Add all ingredients in a blender and mix until smooth.
  2. Pass the mixture through a sieve. Discard solids.
  3. Fill the molds up to 5mm from the edge.
  4. Freeze for at least 6 hours.

Notes

The number of lollies depends on the size of the molds, this recipe yields 1 + 1/2 cups of silky lolly mixture.

We love going there this time of the year, because the slopes are completely covered of wild garlic. We get all crazy and eat tons of wild garlic right there, freshly picked.

Today I’m sharing with you a recipe, that you are gonna love, because it will show you a wonderful way to use leftover fish.

I hate throwing food away, I’m sad when – very rarely – my food goes bad. This is the recipe I created for when I’m left with cold fish from lunch. Cold fish to me is … meh. Not very appetizing. I mix it up with spices and tomatoes and virgin olive oil and it turns into posh food 🙂 How about that!

I’ve even prepared a little idea for how to use sardine pâté. Sardines go really well with eggs and like all fish – with garlic. Since it is spring and I’ve been telling you about my wild garlic obsessions, I’m adding that too 🙂

SARDINE PÂTÉ

Ingredients

  • 250 g leftover sardines deboned
  • 1/2 cup virgin olive oil
  • 1/4 cup tomato purée
  • 2 cloves garlic
  • 4 tsp dijon mustard
  • 10 g / 2 dried tomatoes
  • 1 TBSP dried or fresh oregano
  • 1 tsp sweet pepper powder
  • 1/4 tsp black pepper
  • 1/4 stp cayenne pepper
  • 2 tsp lemon juice
  • salt to taste

Instructions

  1. Add 1/4 cup virgin olive oil, garlic, tomato purée, dijon mustard, dried tomatoes, oregano, sweet pepper powder, black pepper, cayenne pepper, and lemon juice into a food processor and blend well. Add the rest of the oil if necessary to get a smooth paste. Salt to taste.
  2. Keep in the fridge, but take out half an hour before serving.

Notes

If you are using fresh sardines, dry them first. Fry them in a pan with a little oil 2 minutes on one side, 1 minute on the other. Transfer to a cold plate and wait for five minutes to cool down a little, debone and use like leftover sardines.

SARDINE PÂTÉ AND WILD GARLIC SANDWICHES

Ingredients

  • 4-5 eggs
  • 1 TBSP oil
  • sardine pâte room temperature
  • 2 baguettes
  • 10 wild garlic leaves chopped
  • chilly flakes to taste
  • pinch of salt
  • pinch of pepper

Instructions

  1. Crack the eggs in a jug, add a pinch of salt and pepper, and beat them together with a fork.
  2. Heat a pan over medium heat, add oil and eggs, and stir slowly with a wooden spatula until the eggs are soft and almost a little undercooked. Remove from heat. The eggs will continue cooking in the hot pan while you prepare the sandwich.
  3. Cut the baguette into 1 cm thick slices and spread the pâté over.
  4. Divide the scrambled eggs between the slices and top with chopped wild garlic leaves and chilly flakes.

I’m feeling summer-ish with this vibrant morning oats bowl. It is filled with raspberries and bananas and topped with tahini and yummy crunchy nuts, seeds and fruit.

We’ve had such a beautiful week full of sunshine. It called for a morning oats recipe and take some shots in the warm morning sun. This recipe is so simple and perfect for a busy day. You know, how a lot of times you skip breakfast because you are in a hurry or you don’t feel like preparing anything. Well, it can’t get more simple than this! Plus, banana and rasberries – you can’t miss with that combination. I added a little maca for some extra nutrients and vanilla for your brain.

Last week I made a brand new photo backdrop. You can see it on these photos. Since I just started this blog, I don’t have a lot of props to work with. But I do have parts of my old bed in the basement, so I used these for making my new prop. I did a double-sided wooden backdrop, white on one side and black on the other. I was affraid to mess it up but it is acually very easy and there is practically no way to mess it up. Especially if you are aiming for distressed look. If you want to make your own backdropyour own backdrop here are simple instructions. I did it similarly, with some extra details. I might post instructions for it in the future.

MORNING RASPBERRY OATS

Course Breakfast

Ingredients

OATS

  • 1/3 cup rolled oats soaked overnight in 2/3 cups water
  • 1/2 cup raspberries fresh or frozen
  • 1 banana
  • 1/2 tsp vanilla seeds
  • 1 tsp maca powder

TOPPINGS

  • tahini paste
  • sesame seeds
  • pumpkin seeds
  • coconut shavings
  • almonds
  • chunks or slices of persimmon
  • raspberries

Instructions

  1. Put soaked oats and the remaining water in a blender. Add raspberries, banana, vanilla seeds, and maca powder.
  2. Blend until smooth. If it doesn’t blend well add a little more water.
  3. Top with tahini and other toppings that you like.

Notes

You can use milk or nut milk for soaking instead of water.
The listed toppings are a suggestion. These are the ones that I think go well with the recipe.

Coffee Pudding – Not a typical one!

This creamy and wobbly coffee pudding is seriously the best pudding I’ve ever had. It’s made only with bananas, persimmon, cocoa powder and coffee. It’s like having your morning shot of coffee together with a dose of fruit. Not that I know how morning coffee looks like. I don’t even drink coffee!

I can’t have caffeine. Seriously! As I’m writing this I’m shaking, because my body got an unusal amount of caffeine. I’ve been testing this recipe and you can imagine how much coffee I’ve had. You’ll probably be surprised to hear I’ve had decaffeinated coffee and I’m shaking anyway. Then why am I making coffee pudding you ask? Because I love the smell and taste of coffee. Very rarely I treat myself with a warm cup of decaffeinated cappuccino and it’s enough for a while.

It used to be better, when I drank coffee more often, but even then it happened sometimes. The fast heartbeat. So I stopped and now I have it only when I really really feel like it. And this week I had coffee pudding. A lot!

My coffee pudding is actually a very thick smoothie. It contains bananas, persimmons, cocoa powder and coffee. Nothing else. Super simple and quick.  No fancy tricks, but very yummy. I’m almost sad that I can’t have it every day. I hope you’ll love it as much as I do.

COFFEE PUDDING

It takes 60 min for the refrigerated version, that gives a real pudding consistency.

Ingredients

PUDDING

  • 1/2 cups water cold or room temperature
  • 3-4 tsp instant coffee
  • 1 persimmon keep in the fridge for an hour or two before making coffee pudding
  • 2 bananas keep in the fridge for an hour or two before making coffee pudding
  • 3 TBSP unsweetened cocoa powder

TOPPINGS

  • persimmon slices or chunks
  • cocoa nibs
  • coconut shavings
  • pomegranate seeds

Instructions

  1. Dissolve the coffee in the water. Don’t worry if it doesn’t dissolve completely.
  2. Chop persimmons and bananas into chunks and put them in the blender.
  3. Add cocoa powder and coffee and mix until it is smooth.
  4. Serve in a bowl and top with your favorite toppings.
  5. Now you can decide to eat it immediately or wait for about an hour (or more), until the pudding has cooled down in the fridge. This will give it the jelly-like consistency.

Notes

The pudding should be thick as a regular pudding. But if you prefer a smoothie, you can add extra liquid (coffee, milk, nut milk). That’s also super delicious.
Dissolved coffee should be quite strong. Preferably you should add an amount you usually use for 2 people.
You can use any kind of persimmon. I’m using a firm vanilla persimmon, but you can use the gooey hachiya persimmons too, just make sure it’s ripe enough.

Hot Curry Spice Blend

This is spice blend for your curry dishes that you can make in only 5 minutes and keep in dark for a long time.

I can’t emphasize enough how much I love spices. Just a little pinch can transform any blend meal into a mouthwatering feast. My mum never used a lot of spices. However I’ve managed to get her to at least use pepper and chilly flakes. I can say, that made me very happy and if you’re not a spice lover, I guarantee this one is going to change you mind.

There are many curry spice blend recipes out there. Many of them use turmeric. I don’t use it in this recipe, because it has a quite powerful flavour. So I add it to the dish separately only if I know everyone will like it. If you prefer to have it in this blend, just add a teaspoon to the mixture. It is also delicious. This blend is quite spicy, so keep that in mind when making it. If you can’t stand the heat add only half a teaspoon or just a pinch of chilly.

Ingredients

  • 4 tsp coriander seeds
  • 2 tsp cumin seeds
  • 2 tsp fenugreek seeds
  • 1 tsp peppercorns
  • 1 tsp chili flakes
  • 4 curry leaves
  • 2 tsp dried lemongrass
  • 2 tsp powdered garlic
  • 2 tsp ground ginger

Instructions

  1. Roast coriander, cumin, fenugreek, and peppercorns in a hot pan without any oil for about a minute.
  2. Grind the roasted seeds and the rest of the ingredients in a coffee grinder or a mortar.

This is an easy one. All you need is 5 minutes and a few simple ingredients. Enjoy your spicy pea soup!

Autumn is in it’s fullest beauty here in my neck of the woods, colourful but cool and damp. Cold just makes me wanna snuggle under a warm blanket and do nothing at all. I don’t feel like cooking for hours and then spend more time cleaning the dishes. This bone chilling cold is perfect for a warm bowl of soup. Spicy pea soup comes to my mind. It is loaded with vitamins and anti-oxidants, which we all need in this autumnish weather.

I love eating fresh peas, it’s sweet and crunchy. A perfect healthy snack! But cooking it and spicing it up gives peas an extra dimension. If you are a soup lover like me than this recipe meant to feed your whole family, will probably be serving just one. Let’s get started!

Here’s a super easy spicy pea soup, that takes only a few minutes to prepare. Then you can curl up in your blanket and eat your four bowls of soup.

SPICY PEA SOUP

Total Time 5 minutes

Ingredients

  • 560 g fresh or frozen peas
  • 2 cups water
  • 1 tsp grated ginger
  • 2 tsp wasabi paste
  • pepper by taste
  • salt by taste
  • 1 TBSP coarsely chopped parsley
  • 1/2 thinly sliced large chili

Instructions

  1. Boil the water and add the peas. If you are using fresh peas, cook it only for 2 minutes and if you use frozen peas cook it for 4 minutes or until tender.
  2. Move it to the blender, add ginger, wasabi paste, salt, and pepper. Blend it well until the soup is creamy and light. If it is to thick for your liking just pour in additional hot water and check the seasoning.
  3. Place in a bowl and garnish with chili slices and parsley.
